Shrimp Tacos with Pineapple Salsa
This one is SO delicious for my shrimp lovers. Fairly quick and easy meal to feed a group or family.
Ingredients:
Shrimp
Red Onion
Cilantro
Lime
Pre-diced pineapple
Seasonings of preference
DIRECTIONS:
Finely dice red onion, pineapple, and cilantro. Combine and season with salt and lime juice.
Season shrimp generously.
On a preheated pan or skillet, align shrimp so they are all touching the pan evenly.
Cook on each side until shrimp are browned and have transformed from transparent to white and red.
If you prefer crispy tortillas, heat up some avocado oil in a pan to 350 and cook for approximately 1 minute and 30 seconds each side, or until your tortilla looks crispy. It will harden up a bit once it sits to cool.
