Peanut Butter Chocolate Stuffed Dates

My favorite meal-prep dessert to keep on deck. Creamy, chewy, and delicious. And nutritious!

Ingredients:

  • 1 cup dark chocolate chips

  • 1 tbsp coconut oil

  • 16 oz fresh dates

  • 1/3 cup nut butter of choice

  • Flaky sea salt

DIRECTIONS:

  1. Melt chocolate over stove using the double boiler method (easiest, quickest way)

  2. Cut each date in half and remove the pit

  3. Stuff each date with about a teaspoon of nut butter and pinch it closed

  4. Drop the date in melted chocolate and use a spoon to coat fully and then let the excess drip off.

  5. Place the coated dates on a lined dish and sprinkle with flaky sea salt

  6. Freeze for 20-30 minutes and then transfer to a sealed container to keep in the fridge throughout the week.
